It is neither a ranking nor a guide to the best restaurants: Toulouse Mange Bien is, above all, a collective portrait of today’s Toulouse cuisine. The book, which will be released on Thursday, October 1, 2026, features 36 recipes—31 sweet and savory dishes, plus 5 cocktails—created by 36 chefs from restaurants and venues across the city. A must-have for all Toulouse foodies!
Toulouse Mange Bien, the book for all lovers of local and contemporary cuisine
Who’s behind this wonderful project? Two founders: Morgane Roques and Antonin Romeas, founder of the Baccus Social Club, which has been organizing events at the intersection of music, wine, and gastronomy for several years. The common thread linking the contributors in these pages isn’t fame, but a shared vision: respect for seasonal ingredients, short supply chains, and a commitment to artisanal cuisine.
The book thus has a dual purpose: to inspire readers to cook these recipes at home and to encourage them to visit the establishments that inspired them. All of this is captured through the lens of Quentin Tourbez, a culinary photographer originally from Aveyron and based in Toulouse, who handled all the photography and layout.
We’re certainly not complaining—this self-published book even boasts a local connection right down to its production. That’s right, it was printed at the Escourbiac printing press in the Tarn region, just 45 minutes from Toulouse. Funding was secured through a crowdfunding campaign.
How can you get your hands on the Toulouse Mange Bien book? Starting October 1, it will be available at most participating restaurants as well as at several retail locations in Toulouse: the Ombres Blanches bookstore, the Trentotto store, and Quartier Libre. It can also be ordered online through the Ulule campaign.
That same evening, a launch party is scheduled at the bistro Les Tilleuls, featuring a photo exhibition by Quentin Tourbez showcasing images from the book. Morgane Roques and Antonin Romeas will be there to present the project in person. The exhibition will remain on display throughout the month of October. <See you there?
