Rien ne va plus! It’s well known that cassoulet is one of the culinary specialties of the South-West. We even hold a giant banquet in its honor every year. And yet, the title of world’s best cassoulet has gone out the window and been awarded to a pair of restaurateurs from Lyon. But even if we’re no longer number 1 in this jewel of Occitan cuisine, we’ve still got the Top 14.
Lyon is home to the best cassoulet in the world
But the title was ours. Have we been resting on our laurels that flavour cassoulet? On Monday January 20, 2025, a panel of experts chaired by Michelin-starred chef Michel Sarran met at the Rex in Toulouse to elect the world’s best cassoulet. A total of five establishments competed in front of an enthusiastic audience. When the results were announced, the title went to a duo from Lyon.
After meticulous tasting and lengthy deliberations, Timothée Déguingand and Nicolas Ferrand from Hôtel Pullman Lyon Part-Dieu took the precious title. To make matters worse, the two Lyon restaurateurs entered the championship at the last minute to replace a missing team! A surprise victory that never tasted so good.
Toulouse wins the “Prix du Public
Toulouse didn’t leave empty-handed at the end of the 2025 World Cassoulet Championship. During this 9th edition, we salvaged our honor by winning the “Prix du Public“. Located in Roquettes, Maison Pardailhé won over the local taste buds. As for the evening of the most eagerly awaited competition of the year, it took place in a convivial atmosphere, hosted by the comedy duo Les Chevaliers du Fiel .
We’re eagerly awaiting 2026 to find out whether Toulouse will succeed in reclaiming our cup! In the meantime, there’s no need to go all the way to Lyon for a good cassoulet. The pink city has a long list of restaurants where you can enjoy this specialty from Castelnaudary. Here are at least 6 good reasons to cheer us up!
