On Monday evening, under the gilding of the Grand Rex in Toulouse, the excitement was at its peak as the legendary competition celebrated its tenth anniversary. Created by the Chevaliers du Fiel, the Cassoulet World Championship honors this emblematic dish from the South-West of France in an atmosphere as serious as it is festive. In front of 150 guests, five renowned chefs defended their vision of this culinary treasure. For this anniversary edition, the stakes were high, as it was imperative to bring the trophy home after having it snatched from Lyon last year. And they did.
A historic competition to mark the tenth anniversary of the world cassoulet championship
This unique tournament was born of the fertile imagination of Éric Carrière and Francis Ginibre, the comedians behind the Chevaliers du Fiel, who are passionate about our region. For the past decade, they’ve been bringing together star chefs and producers to celebrate the art of the cassole. This year’s jury boasted impressive expertise. Among them was chef Michel Sarran, always attentive to precise cooking and balanced flavors. Alongside him, Mayor Jean-Luc Moudenc and influencer Damien Épicurien ensured respect for ancestral codes.
There’s no question of adding fancy ingredients like tomatoes or carrots. The rules emphasize simplicity, product quality and, above all, a lot of love in the preparation. What’s more, every year the selection of candidates guarantees a level of excellence that will delight the taste buds of the spectators in attendance!
Le Bibent and Conserverie Quillot take the honors
In the end, this memorable evening produced two top-quality awards. On the one hand, the People’s Choice Award went to Conserverie Quillot, whose generosity won the hearts of connoisseurs. On the other, the prestigious Jury Prize went to Le Bibent, the famous Place du Capitole institution and one of Toulouse’s finest restaurants. This victory marks the return in force of Toulouse excellence.
The chef won over the judges with a creamy jus and meltingly soft meats. As a result, Toulouse is once again officially the world capital of this unmissable specialty. From now on, gourmets know exactly where to go to taste the best cassoulet on the planet!
